How to Enjoy Miller & Carter’s Sourdough Bread

When dining at Miller & Carter, their sourdough-bread can be enjoyed in several ways:

  • With butter
  • With olive oil and balsamic vinegar
  • As a side to steak or seafood

How to make it at home?

Ingredients:

  • Sourdough Starter
  • Water
  • Bread Flour
  • Salt

Equipment:

  • Large mixing bowl
  • Dutch oven
  • Parchment paper
  • Bench scraper (optional)

Instructions:

  • You take a small amount of your existing sourdough starter (10g in this case) and mix it with fresh water (25g) and flour (25g). This provides fresh nutrients for the natural yeast and bacteria in the starter to grow. After that, place it at room temperature & let it double in size.
  • Now, mix The active starter with 359g water to help distribute the yeast and bacteria evenly throughout the dough. Then add 500g of bread flour and 10g of salt for flavor. Mix until a shaggy dough forms, then cover it and let it rest for 1 hour.
  • Now, perform the stretch and folds technique. First, wet your hands & grab one side of the dough. Then, pull the dough upwards to stretch it and fold it.
  • Then repeat this step, reseat the dough, and let it rest for about 30 minutes. After doing this, repeat this technique once more time!
  • Cover the dough & leave it at room temperature for about 7-10 hours. The dough will allow the natural yeast to produce carbon dioxide, which makes it rise.
  • Now, shape the dough into a tight ball. Then, place it in a floured-proofing basket or bowl. Then cover & give time for rising it.
  • Preheat your oven to about 500°F with a Dutch oven inside. Use a sharp knife or bread lame to cut the surface of the dough. It will help to expand during baking.
  • Now, place the dough in the preheated dough oven, cover it with the lid, and bake for 20 minutes. Then, remove the lid and lower the temperature to about 450°F. Bake for another 20-25 minutes until golden brown.
  • Then, wait for cooling, cut in the scissors, and enjoy it!
